Giang Thi Nguyen, 66, of Easton, died Wednesday, December 21, 2022 in her home. Born February 19, 1956 in South Vietnam, she was the daughter of the late Chuong Van Tran and Ba Thi Tran. She worked for Binney and Smith and was well known for her Vietnamese cooking.
Surviving are her son, Hieu Nguyen and his wife, Sarah; her companion, George Wolfe; her brother, Thanh Kim Tran; and four grandchildren. Her daughter, My Nhan Thi Nguyen and her brother Son Van Tran died earlier.
A visitation will be held from 11:30 am until 1:30 pm on Thursday, December 29, 2022 in the Ashton Funeral Home, 1337 Northampton St., Easton. Interment will be in Forks Cemetery. I am sorry for your loss Hieu. Praying for her and your family members. Over the years everyone at RCN (and our families) really enjoyed her cooking. She will be missed. She was very proud of her son, and that is wonderful. While life gives us difficulties, she found an island of paradise in the love of her family. May God Bless her and give comfort to the family.

It saddens me deeply to read this bro. Your mother was a fighter and a strong woman. She was an incredible human and a great mom. The person she was lives on through you and your babies. She will be greatly missed. Know that she’s in a better place with less suffering and that she is looking down watching over you and your babies with a big smile on her face.

I was so sad to hear of Giang’s passing. Over the last year or so, I had the chance to speak with her briefly many times while she received her treatments at our infusion center at St. Luke’s. She had such “spunk” and fight to her! I enjoyed her company and she’ll be missed. Her treats, especially the chips she made were delicious, and demonstrated a generous spirit. Reading all the condolences about your mom. Be honored that your mom was the greatest and the best mom at large. Moms should be the best person, besides your family, honor her and continue some of her legacyโs with your family. I will forever remember her.
